On a cold winter’s night there is nothing nicer than a warm chunky soup, a relaxing red juice and some avocado sourdough. Did you know our 5-a-day (recently changed to 7 a day ) in Japan is 17 a day!!?? Yep you read that right! Japan has one of the longest life expectancy in the world and many claim is diet related!
According to a recent enough study the high life expectancy enjoyed in Japan is largely down to the nation's healthy diet, which is super low in dairy and very very high in vegetables and real food (non processed).
I don't know if I manage to get all 17 a day every day , but I make sure I try. As our juices contain on average over 2kg of produce , a single juice can count for up to 10 a day!!! Then is just a matter of adding some salads and soups and we are sorted!.
This recipe just came together by pure luck, as my fridge was half empty so please feel free to adapt it to suit your fridge :)
- 1 large onion
- 2 cloves of garlic
- 3 carrots
- fresh thyme (2 springs)
- 1 tbs cumin seeds
- 1 tbs fennel seeds
- 1 large sweet potato
- 1/2 butternut squash
- 500 gr spinach
- 1 litres vegetable stock
In a pot sweat the onion, garlic and carrot with some EVOO. Once the onion has gone transparent add the fresh thyme, cumin and fennel seeds.
Chopped the sweet potato and butternut squash and add to the pot together with the vegetable stock. Simmer for a good 20 minutes until soft. At this point separate it into two. Blend one half and pour it into the chunky half. Add your spinach for colour and texture and you are ready to serve!
